A Fresh Vegan Lunch Idea
Nut butter and jam sandwiches are my go-to vegan lunch favorite (on gluten-free bread, of course). But today my strawberry jam jar was empty! So I improvised with some fresh (pitted) cherries. And the results were so delicious that I'm never going back to jam. Just pit 'em, slice 'em and be wowed by the fresh taste and texture, a million times better than jelly. Try this with any summer fruit: sliced apricots, peaches, plums, blueberries. Next on my list: a handful of the tiny strawberries I grow on Rule Breaker's Brooklyn terrace.
My current favorite nut butter is Maisie Jane's Organic Creamy Cashew Butter because the only ingredient is cashews. But even though it contains no sugar, it still tastes a bit sweet. Who says being vegan isn't easy and delicious?
