I'm always looking new vegan lunch ideas that are FAST. So I was thrilled to discover delicious, gluten free Forbidden Rice Ramen from Lotus Foods, which is made from organic black rice and ready in just four minutes. While it's cooking, I throw some greens--usually a combo of baby kale and arugula--lemon juice, vegan yogurt, salt and pepper in the food processor to make a quick sauce. I drain the ramen, rinse it under cold water and put it in a bowl. Then I add some chickpeas (which I add to almost everything!), some of my pesto, and top with roasted pumpkin seeds for crunch. Yum AND super healthy! Store any remaining pesto in the fridge.
