Fast, Fresh, Vegan Lunch: The Tastiest Herb You've Never Heard Of
It's been super hot here in Brooklyn and all I want for lunch is a cool salad. And this summer, I discovered a new herb that instantly elevates everyday greens: Sorrel. I found a live plant at my local Whole Foods, and decided to add it to the mix in my terrace garden. I was glad I did. These pretty, red-veined leaves have a delightful citrusy tang I just love. I throw them in with a arugula mix and some fresh tomatoes (also from my garden), and top with a little olive oil, a splash of sherry vinegar, and some salt and pepper. Fast, fresh, vegan...and delicious!
